Ingredients

  • 2 soft- or medium-boiled eggs
  • 1 avocado, sliced
  • 1 cup mushrooms, sliced
  • ½ cup cherry tomatoes
  • ½ cup broccoli florets
  • 1 tsp olive oil
  • 1 tsp everything bagel seasoning (or sesame seed mix)
  • Salt and pepper to taste

Instructions

  1. Boil the eggs by bringing water to a boil in a pot. Add the eggs gently and cook for 7-8 minutes for a jammy center. Cool under cold water, peel, and slice in half.
  2. In a skillet, heat olive oil over medium heat. Sauté sliced mushrooms for 4-5 minutes until browned. Add broccoli florets and cook until just tender. Set aside.
  3. In the same skillet, blister cherry tomatoes for 2-3 minutes until softened.
  4. Assemble your bowl by arranging the avocado slices alongside the sautéed vegetables and halved eggs.
  5. Finish by sprinkling everything bagel seasoning over the dish and adding salt and pepper to taste.
